Good brands for boots for winter in Europe
I'll defer to any Europeans on further boot company recs since I'm US based. But I would say if you're not trudging through big puddles or ankle height snow all day, most decently well made Goodyear welt or stitchdown boots will do you just fine in the weather, depending on the leather that's used. And I think you should be able to find something at the higher end of your budget for that.

Good brands for boots for winter in Europe
Blundstones is a great rec above. It also just depends on what you need out of the boots. Style, do they need to handle weather well, craftsmanship, or is it mainly price.
Beckett Simonon and Taft are both good brands that do MTO, so they're usually a bit cheaper overall for their quality.

Which sunglasses good better on me?
I agree with Dicedd on all of them seeming a little big, kind of giving off security/Secret Service vibes to me.

Help for finding a good-fit jacket
Echoing what @ler said, not sure a Harrington jacket will be warm enough for -10C. I'm not as familiar with the full range of Harrington jackets, so there may be some good lined/insulated ones, but I know part of the appeal of Harrington jackets is usually their slimmer cut...
But based on your comment about Filson's prices, finding a Harrington from a reputable brand, let alone a suede one, for <$250 will be tough. If you're fine going with a random Amazon brand, then go for it.
My rec would be to look at sherpa lined trucker jackets. You can usually find them in shorter cuts, they'll definitely keep you warm, and you'll have some decent options in a lower price range. They're definitely less sleek, more heritage-y than Harrington's, but it keeps you out of puffy jacket territory.

help me decide on a pair of boots
If you can't go second hand, I think you have two options:
- look for a deal on Eddie Bauer boots around $200 that match the Danner style. I think Allen Edmonds also has a factory seconds page where they might have a hiking style boots
- just get timbs. They're a classic at this point and it wouldn't be hard to add pieces to your wardrobe that go with them if you need to (but the pics of the clothes you posted seem like they would work well enough)

looking for a low maintenance wool car coat in light grey
But this all really depends on the garment/poly blend you're dealing with. It's just a good rule of thumb that wool pieces are going to be made better and therefore cost more; not always of course, but a manufacturer doesn't choose wool for cost or ease of production. If you want something that lasts long like you said and are willing to shell out a bit more for it, then it's probably worth it even considering a once a year dry clean cost.

looking for a low maintenance wool car coat in light grey
Heat regulation, breathability, durability, and odor retention are all concerns where wool tends to outperform poly.

Like @oman121 says, neither of them is going to work with everything.
If you already have an existing wardrobe this will fit into, then choose whichever color complements the wardrobe. If it's meant to be a starting point, then just pick the one you like better.

Winter clothing help
If you're looking for shorter, non leather jackets, just look for any trucker jackets. Lots of companies make them in any kind of fabric you can imagine, and if your winters get very cold you can look at lined or wool options.

Determining my Style
I don't think anyone's trying to give relationship advice here; it was mentioned in the post and seems to be something that OP is thinking about. If there's added context that could help inform a discussion about personal styles or fashion styles then great. Otherwise, I'm not trying to tell anyone to sort out their relationship or personal style in therapy.

Determining my Style
Parroting what @awburkey said, brand lookbooks can be a good source of inspiration, but they can sometimes be more rigid to a particular aesthetic/style if they're a smaller niche brand. Social media, blogs, sources on broader fashion trends are all great places to get broader inspirations.
Two other general tips I'd recommend:
- Learn the fundamentals when it comes to outfit shape/fit, color/pattern choices, incorporating texture.
- Start by finding a sort of statement piece: maybe a jacket or overshirt, that really speaks to you and fits you well, and then focus on slowly getting pieces that complement/work off of that piece and that you enjoy.
Eventually, if you can build out a solid capsule wardrobe that you feel represents your "style", then you'll have a good sense of what you like, and where you can potentially start to branch out from your style and experiment further.
As far as your wife's comment, does she explain why she doesn't think it's your style? In terms of your attraction to heritage wear, is it the practical aspects that attract you (durability, simpler selection compared to other styles) or more the aesthetic itself (classic fabrics/silhouettes/articles maybe)?

Bag Alternatives
Yeah, that's all I really found on a cursory search, though I'm totally open to there being more damning info out there. But like you alluded to, most large companies' executives skew conservative and are gonna donate to questionable causes or ones you don't agree with.
Feels like people just used that instance to justify writing the whole brand off and slagging it. I understand the folks who have had bad personal experience with the products, or just don't like the aesthetics, but it feels more like shibboleth than actual good faith criticism a lot of times. As some people say get GS or some other boot at a higher price, and yeah those are obviously better. But for someone getting their first pair of GYW boots who doesn't know if they're going to like them and might wear once every month or two, they're a perfectly fine starting point, and a $100 difference is not insignificant to a lot of folks.
What were we talking about before this... Oh yeah, bags! WaterField looks cool, and it's a good price for MitUSA I'd say
