Fit Doctor?
I think you're off to a good start. In addition to the tips and brands mentioned already I recommend checking out this article and inspo folder from the gorp goat Dev: https://discord.com/channels/1116793467654381685/1215373466816217088/1215373466816217088

Selvedge Denim: is it actually that much different from non-selvedge?
Have a read through that thread. I think that'll answer most of your questions

Your list of brands makes a lot of sense already. And your recent fits are all bangers and very much go in that direction. So I think you're on the right track! In terms of brands you could look into second hand/sale Nanamica, Satta, Sillage, Needles HD pants, maybe some EG stuff (based on the first two fits in your inspiration in particular). For tops/jackets I'd say your inspiration features fairly classic designs but then really big, and sometimes cropped. Just sizing up doesn't always work for that unfortunately but I think doomscrolling vintage tops and looking for the right proportions is you best bet. I remember that stevie also had a fit doctor topic some time ago with a similar question. I'll see if I can dig that up. Should be some good stuff in there. And maybe casey can also helpt out with some more recs for vintage stuff and ideas for things you can proxy from japan. Because I think there's a lot there but I don't know shit about it.

Orslow fatigues
I agree that they are a bit warm for summer pants. The regular version that is, they also make a summer weight version

Range of Motion for Jeans
Jokes aside, this is going to be highly dependent on your lifestyle and preferred pants fit. Trying out things you would normally do in your pants while trying on a new pair sounds like a great idea. That should give you all the info you need. We're currently in an era of less slim fitting pants so I'd say: don't get pants that feel constricting in any way and enjoy your full range of motion

Range of Motion for Jeans
You're going to want to look for a ISO 501XX certified fit to make sure it meets a standard range of motion criteria determined by a panel of experts to be required for the daily lives of denimheads. These includes taking two stairs at a time and getting up from your desk every two hours to do some light stretches
