My best advice, but also very basic, would be to try a bunch of watches, write down their diameters and take some pictures with them on your wrist.

The haircut is a real improvement. If I were you I think I would have shaved it all, though. You seem to have a really good beard nature, so a bald head would look cool on you, with a nice thick but trimmed beard

Not a product recommendation but something that works for me : you can try to wash you hair less often. Washing dries your hair and it can add to this volume effect when you have thick hair, so try to limit you to 2 or 3 shampoos a week.
