NMDs still trendy?
I still wear a couple different pairs of NMDs. I think you can make them work with various looks, it's just a matter of experimentation. I think Stan Smiths will work better with chinos, but that's not a hard and fast rule. Try things out and see what works for you.

NMDs still trendy?
Adidas has several classic sneakers that will give you more longevity and flexibility than NMDs imo.
Superstar - these never really go out of style and have been a staple for decades.
Stan Smith - a classic, minimalist sneaker that has its roots in tennis
Samba - these have seen a resurgence in the last few years but have been a staple in the soccer/football scene for decades

2nd Hand Shopping in Japan
I did. 2nd Street has a ton of locations and some of them have some nice finds. Be prepared to do some digging though.
Kindal also has a number of locations. Much more organized than 2nd Street but more of a focus on luxury brands.
For brand new items, I found some great pieces at Nepenthes (it was the New Year's sale). Beams is great, the various Kapital stores are worth checking out, and the Studio d'Artisan store was great if that's your vibe.

What is the difference between Adidas Stan Smith Lux and Stan Smith Recon?
I believe the Lux are leather uppers and the Recons are a mix of leather and recycled materials.

Stylish winter jacket?
Not too cold. In the 40s Fahrenheit at the coldest, but I would probably wear the same jacket when I travel to colder climates like Japan in the winter. I was fine there in my North Face with some heattech as a base layer.
