Why does this fit feel off to me?

I feel like that Cardigan is very pretty, but at the same time I feel like the issue is a combination of languages. To explain that's a very soft looking Cardigan, delicate looking while you are wearing a wide cut Jean and jeans, specially jeans like yours are workwear, and I think that's what's off you wouldn't work on that Cardigan but those jeans scream hard-wearing and work. I think the Cardigan will look much better with something that's softer than those Jeans, and those Jeans will combine better with other kind of Cardigan, in general this is a minor thing and really it looks good enough most people are just going to see the parts and not overthink it. But with those Jeans, a looser bigger less fine Cardigan would work better.

Can someone whos 5'7 pull of a long coat

I don't know how that belief where people say you need to be tall to wear long coats started but it couldn't be further from the truth, I lived most of my life in southern Europe and long coats were an staple and worn by many many short men, and extremely casually too. If you look at historical pictures of men wearing long coats, you need to understand that in those eras people were shorter on average and the majority of men were not 180 cm in height. I mean, just relax and do it.

Imho, you would be better going to any charity shop in your area, and also espending time trying stuff on, Charity shopping has been destroyed by resellers so is just not the same, but there are going to be a lot of different styles and some stuff will work better than others in you, is good to just experience it and get a feeling on how different cuts interact with your body and personal style. Dont go directly to Vinted unless pro sellers as returns are complicated and you are not sure what would be perfect for you.

These ones in your pictures are just bigger sizes, probably bought secondhand, and that would be your best bet: go thrift shopping and look beyond your regular sizing and try stuff on. This aesthetic is literally perfect for thrift shopping.

Is this wool shirt too short on the arms?

Like if you look at the placket, it looks like it's not straightforward that's due to the placket keeping it's original length due to the extra fabric and buttons while the rest of the shirt looks like it shortened quite a bit.

Looking at your shirt, to me it looks like It might have been washed and dried inappropriately and as it has shrunk quite a bit, maybe that's why it's being sold second hand.

How do you style more oversized outfits?

Great, I think you look better when you are wearing stuff like in the picture with the jeans, and the next two than when you are wearing the denim jacket, but this is my preference and if you feel like you look better with the denim jacket at the end of the day is your own style, I just think that pulling that fit is way way harder, definitively not in the territory of someone who is trying to experiment with oversized clothing and is just dipping hes toes.

Like he could go and buy stuff that is just bigger, but is he is dipping hes toes into breaking from the slim-fit millenial trauma, he needs to start from a secure place, aniway, he asked a few questions and I shared my own preference which is to go for stuff that is intentionally wider and looser, as my preference is not to buy stuff that is the wrong size even If I have done it with a couple jackets.

Oh I guess you mean this: https://www.gq.com/story/vintage-armani-looks-so-cool This is designed to be loose and oversized, very different to just going to a suit store and getting a suit 3 or sizes bigger. But even then , those big jackets would not look as good outsize of those particular fits and would be very difficult to actually style outside of a very specific combo.

I have not seen pictures of Armani or Ralph Lauren models wearing shirts that are several sizes bigger, oversize yes, seen plenty I even shared an example, in fact I have never seen men who were not extremely handsome pull the boyfriend shirt look, would like to see some examples.
