"Unknown Host" occurs when the client can't get numberic IP from the domain iirc, possibly because of misconfiguration on server side, DNS error on client side, or simply mistype IP address
Ask them to run
ping <your server ip> in Command Prompt to see if it even got the numberic IP matching your server7 replies

Use chunker.app to downgrade back to 1.8, make sure to use desktop client if your world is too big
In most case your inventory will be wiped too, you can hire someone to write a plugin to convert inventory data to older version

First of all, why your post have "Fabric" tag when you have a Paper server 😭
