With a temp value that far out of whack, either the thermistor is broken, or the wires are shorted.

I think you have some bad wiring of the thermistor between the hotend and your board. Double check the wiring and take some careful pictures of where the wires are coming out, and what port they are connected to on the mainboard.

The

Do you know what type of thermistor is on your extruder? any labels?

Then it isn't wired correctly. Bear in mind the wire colors can't be trusted; you'll need to swap some wires around. Time to break out the multimeter!

Issue with X endstop
What you'll want to do is run that command with nothing against the endstop, verify that it says "open". Then with your finger or whatever pressing it down, run the command again and verify it says "triggered".

Could also delete the two
bed_mesh sections in your printer.cfg and restart. The mesh should get recreated at the start of each print45 replies
