Okay look, that will only work if your on the same network.
You really only have three options:
- host it on aternos or other free minecraft hosts (this is will have the most chance of success)
- host it on a paid service
- use a vpn to bring all of there data into your network (aint recommended)

otherwise aternos or other minecraft free host providers is better. Tailscale could send you into a rabbit hole you didnt forsee .
I use tailscale for remote access my services and computers. its a vpn that punches a hole trough firewalls.

Proxy-behind-proxy (BungeeCord/Waterfall, Velocity, ...) These setups are completely unsupported. You are best advised to avoid them, as they can cause lots of issues. Most proxy-behind-proxy setups are either illogical in the first place or can be handled more gracefully by better, more scalable and performant solutions.I see it now... The answer is no. now that is out of the way, How would you recommend i structure the servers?

The servers are setup to use velocity and can connect to them without any issue.
Im used to seperating website to each own sub proxy and so thought minecraft servers could work the same way.
in my head that each sort of server (minigames, pvp hub's) should have there own proxy/ sub proxies.
what should I then do?

You still need to open a port can be quite easy. Let me see if I can help you.
Maybe you can snoop arround in your router interface and search for port forwarding after you have logged into your router.

To forward a server you need to say to your isp router/modem HEY! open up this "door" or port to let people in.
