Make custom models for pre-existing textures
You don't change textures with a datapack pack. You change textures and models using a resource pack. Also their are a lot of tutorials for blockbench online. I would think that it would have a way of importing images into the model which would allow you to use the images you already created.

For one thing the rest of the team working on it has little to no experience with plugins and a lot of what we are trying to do is meant to be in single-player or small multiplayer experiences
