well for one, my own current survival world, where my 12.5k radius map is 26.2gb, and the bluemap assets folder is over 32gb, for a fully rendered 1.20.6 world has also been consistent with my experience in the past, where fully rendered maps take up significant space

If you’re using any map you’ll likely need a HDD as well; bluemap for example will use about the same disk space as the region files plus another ~20%, so for a single world over 10000 radius youre using a lot of that SSD already.

A way to ignore Mojang suspensions?
The bigger lesson here is that if you disagree with Mojang's latest policies, then disable chat reporting on your servers. While relatively rare, there are plenty of examples out there of players catching bans for behavior that was perfectly acceptable to the community they were playing in. As a pretty well-known former staff member of a relatively large community, I have a lot of haters out there, and after my initial experience with Mojang reporting back in 1.19.1, I will never play on a server with it again.

Is a flat donation model viable in 2024?
I'm just one person with one experience, but I've never been able to cover costs with straight donations. Usually I'll get several donations right at launch, and a few more might trickle in over time, but I've never made the total donations last more than 6 months. A lot of people have enough success with strictly EULA compliant, non-predatory perks that it shouldn't be too hard to pay the bills with that structure. It's very possible to have no crates at all, and no p2w stuff like crazy enchants, fly, etc., and still pay the bills. The challenge comes when people want to "make a living" hosting Minecraft servers, which almost always ends up in unbalanced ranks and some form of gambling. tl;dr: It's not too tough to keep your soul clean and keep the server online; if you want to actually be paid for your time (and pay a staff), it becomes very difficult.

Fly permission for VIP's
The answer can depend on some variables, but if you’re using specific regions for pvp worldguard can handle this. If pvp is global you might need a combat manager like deluxecombat or similar. Some plugins that handle the /fly command will also have a setting to disable it in combat, so check the configs for that as well.

Enchants showing up wrong in enchant table??
Any of those have a protocollib dependency? It’s not ready for 1.21 and using it on one of my test boxes messed up enchants pretty badly. Separate issue; any reason why you’re using orebfuscator over paper’s integrated anti-xray?

I'd start with the suggestions you got from mclogs, those are pretty glaring errors. After that, I'd work on the other errors in your log file, there are A LOT (over 12 thousand). I'm more surprised if this server doesn't crash. Personally, I like to try to get the server to at least start without errors or with minimal errors before troubleshooting specific problems. At any rate, it seems the "last straw" that caused the actual crash came from AdvancedEnchantments. There are quite a few updates to that plugin since your version 9.7.15; select the latest appropriate file for your server version and see if that helps (backup and save old files when updating, as always).

I have a player who used to be an OP, now isn't have issues with damaging entities
CMI is a love it or hate it plugin (personally I love it). Looking at your logs I see most of CMI's functions reproduced by another plugin. Personally, I would remove CMI from this setup unless you're using it for something specific that you can't replicate otherwise. I have a feeling this bug and others will be easier to track down after removing some of the conflicts you've got going on. At any rate, you can certainly track down the source of your problem by removing some plugins and restarting, then testing again. Some people use the 50/50 method (remove 50% of the plugins, test, repeat), and that's pretty effective when you've got a lot of plugins installed. Myself, I would start by temporarily removing CMI, then Essentials, then Plotsquared, then Lands, restarting each time to retest.

What kind of info should I put on a motd and tab list?
My tabs usually include placeholders with the time until a few upcoming events (like dragon respawn, KOTH, treasure hunt, or next restart) as well as server version and other small stuff players might ask for (some of them like having the time for example). Much of that will depend on which plugins you use, because each can provide you some useful informational placeholders; I recommend you look through those and decide what information your players will want, and if it's appropriate to include in a tab or if it's better in a scoreboard or on a sign/hologram instead.

Fairly certain I used the same correct settings I've used many dozens of times for various servers. Not trying to make this into a chunky hate thread, just tossing out another plugin I had a lot better experience with.

Chunk loading far from spawn + /worldborder
In 1.19.x it didn't generate the whole chunks down below y0, using whatever latest build I could find from either their discord or github (been a while so I don't remember exactly). Therefore those chunks all had to generate the lower coords as players entered. In one 1.20.x server I forgot to remove the plugin after generating, and it was causing huge lag spikes just by existing on the server. Deleting it solved that problem fully. On another 1.20.x server it just kept generating right past the vanilla border, even though I could go see the border physically there (not just the normal few chunks outside; it kept going).

Personally I use fastchunkpregenerator, I had a lot of problems with chunky on newer versions (ymmv). FCP was much faster and worked without a single glitch. At any rate, whatever you choose, pregen everything inside whatever worldborder you set, in all worlds. You can delete the region files for the areas they explored outside the border, but that's not strictly necessary and it's an opportunity to make a mistake that could delete someone's land.
