Is ->sortable() working on V3?
Oh I saw the error. I had an ->orderBy on my query, and that is why is not ordering enything else. Just removed this: 
->query(UserorderBy('created_at', 'desc'))
->query(UserorderBy('created_at', 'desc'))
And add the default sort 
->defaultSort('created_at', 'desc')
->defaultSort('created_at', 'desc')
