I'm having the exact same issue with Notes. The API Browser is wrong. It says "String" - no mention of RICH_TEXT requirement. How do we undo this? The Notes feature for me is completely broken.

Data model existing objects can't be changed

Create a custom field with the date. I hear you - and I've run into similar frustrations - but creating a custom field is really the answer - while protecting the internals.
