Supported board but unsupported printer
In the process of updating my V-Minion and was going to replace my old skr mini e3 v2 with a RatOS supported board. Both the M4P and Mini E3 V3 are supported, I'm guessing they are for the experimental Prusa support, but they are not supported boards for the V-Minion - https://os.ratrig.com/docs/printers/v-minion. They have more than enough ports, even more when using a tool head board. What's the best way to use one of those boards with the minion, or an unsupported board in ratos like the Pico or M5P? Its easy enough to to change the pin out for the printer.cfg, but what about the initial config of RatOS?

That's just outdated documentation, sorry!
There is no limit to which hardware you can use with each printer, only physical ones (such as not having enough drivers etc).
I recommend you go with 2.1.0-RC2, makes the whole setup process a lot easier with non-default hardware.

Documentation is underway, 2.1.0-RC2 is marked as a pre-release until it's ready. Update all packages after connecting RatOS to your wifi network.

Thanks a lot! So if I go through the config and I'm using an unsupported board, would I just pick any board and update the printer.cfg after and then flash the board?
"unsupported" would mean "not present" in the boards folder i linked above. I don't recommend you go that route, as that means implementing the board files yourself.
There are no limitations on board choice in 2.1, as long as the board has the features you need (in terms of driver slots, pretty much).
You pick all your hardware in the configurator in 2.1. There's no uncommenting etc needed anymore.
