How to change the Fan Pin in the Printer.cfg ?

I want to change the PIN assignment from the hotend to the build fan how would this look like?

replace lines 328-330 in your config with

[fan]
pin: PB7

[heater_fan toolhead_cooling_fan]
pin: PB6

[fan]
pin: PB7

[heater_fan toolhead_cooling_fan]
pin: PB6

in general, don't overwrite ratos variables
