Temps different under V2
I am getting a 2-3 degree temp difference between my extruder temp and bed temp at room temperature. This didn't happen under v1.2.x, a minor point certainly but interesting. I am using a pt1000 on the hot end but not using max 31865 on octopus pro because I got better results in 1.2.4 just setting the sensor type to pt1000. Should I switch it back to the 31865 port for v2?

No, I would stay with normal thermistor port
I doubt the calibration of the two thermistors are even that close together. It almost makes me assume something is now reading these cheap thermistors more accurately than before.
If you're the inquisitive type...just for self understanding... run a test.... swap the two thermistor leads at the board and see if the temp diffs follow the swap.
(do not run the machine that way.... just idle readings)
I noticed this too. My PT1000 is about 2C lower then the bed thermistor.
Having my house temp at 19C, I trust the bed temp at ~19C more.
Nothing changed in v2 with regards to thermistors. That would be all klipper.
