Can I make this sport coat fit with tailoring?
As long as you don't mess with shoulders or chest, everything is possible more or less from my experience.
That said, I wouldn't take in a lot from the chest since it often changes the silhouette... I learned the hard way that you should buy only according to your chest size. If you have a 38, buy a 38, if you wear a 40, buy a 40. I wouldn't bother with buying too large, it will almost everytime cause a hassle...
Fit and a good drape are nice but you must also think about proportions. Taking in too much from the chest area might cause the chest pocket to move too far to the sleeve seam.
Talking about proportions, you can't change button stance/position either.
My overall advice is, buy to fit shoulders and chest perfectly 🙂

Balancing everyday vs. "special occasion" clothing
I would bring up the topic of texture. If you look at suits and sport coats/blazers you can rank them easily on formality by looking at the texture. Color is important too tho, so a finer blazer but in, let's say, bordeaux red is mire casual than a navy one.
So if you want to play with casual and formal you can do it by picking more rough, less finer materials like cordoroy or simply structure-patterns or patters overall.

Coat like this Tom Ford double breasted coat?
I think Enzo Tovare makes similar ones, you'd have to check your local menswear stores if you're from the US or look up online. 🙂

Polos/casual shirts tucked or untucked for business/smart casual?
The old "rule" is that polos are to be worn untucked. But many people actually wear it tucked, especially when wearing a sport coat or a blazer — including me. It just doesn't feel right to me to wear a sport coat with an untucked shirt/polo.
I think wearing a polo is either way casual, so it's up to your taste and your feeling about what's right for you 🙂
