Lag from to many minecart_chests beeing loaded
was restarting the server to get rid of the rail datapack to see if thats causing issues and catched the server nearly empty for a short profile. It still says all the regions are loaded

i would love to run plug-ins but i have not found any replacements.
custom_roleolay_data should not be a problem i think, used that for years. maybe its blazeandcaves or the highspeed rails?
