Looking at "waiting" count, 53k to 51k took 40 minutes, 51k to 25k took maybe 5

it used too process ~1 asset in 10 seconds at first. Now it's 100s per second

I feel that this may be a non-issue actually. I suspect that for some reason this job prioritises "heavy" files such as videos first and they take longer to process. After my job chewed through first ~2000 assets it got much faster.

restoring immich
if you want to be able to restore by just copying folders, you can pass appdata folders from the host system instead of using docker volumes so you back them up as well. This approach requires stopping the server before backing up though.

I see the same thing, a lot of files are uploaded as FullSizeRender. The same files uploaded to Google Photos keep their proper names so there must be a way to extract them.
