also when I get on a server, distant horizons isn't going past the render limit

Thats normal, DH can't generate chunks on a server unless you and the server have the DH nightly installed. You would need to explore chunks for DH to be able to gen chunks for them.

Distant Generation doesn't work in multiplayer, meaning DH won't be able to generate LODs for chunks outside the vanilla render distance.
Instead, as you travel around the world, LODs will be generated for areas you've visited.
In the next update, DH 2.3, you will be able to add DH to your server granted it's running a compatible mod/plugin loader (Fabric, (Neo)Forge, Bukkit and their derivatives). This will allow the server to generate LODs and send them to the client, making distant generation possible on multiplayer.

Keep in mind that this build is still experimental, we do not encourage using it on large servers until further testing.
That doesn’t support shaders

I’m not using the latest iris cuz it needs sodium 6.0 but in using 5.11
Then install the latest sodium
if you're using 5.11 because of nvidium, nvidium doesnt even work when shaders are enabled
so should I just use the latest version on modrinth? (distant horizons)
I have this version downloaded

I've had that versiond ownloaded
you need to update sodium
as well as iris
every now and then, the game will just crash...
like using distant horizons

Also is using chunky to preload the chunks able to help with the distant horizons mod?
Not really, as DH already does what chunky does.
DH already has a built in distant terrain generator that is better integrated into the rest of DH than chunky's terrain generator
What about in multiplayer
If we pre generate the chunks in multiplayer
then you wont see them
because chunky only generates normal chunks, not LODs

worth noting that generally speaking it is worth to use chunky to take load off the server from players generating chunks. may be useless for DH but generally highly recommended.
But DH can do that too
Use DH with the generator mode set to internal, that saves the chunks as it uses the vanilla chunk generator
Combine that with C2ME and you basically have the same generation speed as regular DH set to features
