Everything's gray...
This is both on multiplayer and singleplayer, with and without my resource packs- except for that brief second it worked before crashing and locking up my computer T-T
I have no idea what's causing it if it isn't the resource packs...

Try disabling any resourcepacks you use
/logs
You should send your
latest.log
file to provide additional useful information.
Logs are usually located in the .minecraft/logs
directory.
On Windows: %appdata%\.minecraft\logs
On Linux: ~/.minecraft/logs
On Mac: ~/Library/Application Support/minecraft/logs

Yes, it still persists without any resource packs enabled- I have quite a few mods, so let me write it all down. Maybe one's a known problem maker...
These are all the mods I have installed, but let me go ahead and cut out anything that doesn't change anything visual
Here's all the visual/library mods. I can't remember which library mods change what, but I could imagine some of them possibly changing something- are any of these known to cause issues?
And lastly, there's a few logs from different crashes
I didn't do a good job recording which ones are from when, though...
Does everything work when you have only DH installed?
If so try /binary search to find the problematic mod
Try a binary search and figure out which mod is causing it.
So disable half of the mods, see if issue is still there, if yes disable half again etc etc until you find the mod that's causing the issue.

I have some upsetting news; it's working. And I did nothing. I totally forgot about it, and booted my game like normal, and it just works
More than that, it even works with some shaders that didn't work before
But that's just good news~
Alright, I have another update with proper good news; it broke again, and I was able to pinpoint the problem child to a mod I... forgot about...
Polytone was causing issues, it seems, and I've updated the version. The old one was version 2.3.3 and seems to be having a colormapping issue with some of the Distant Horizons LODs in regards to grass and leaves
The new version I installed is version 3.2.4, and seems to be working right now- but given that the problem seems to have fixed itself several times before, I'll give it a few days before saying it works 100%
I just need to re-explore all the chunks again...
