I feel like it didnt used to, and now distant trees all do this, some not even that far away

Do you have any mod that removes collision from the leaves?
i dont know - but it persists even when I tell DH to render non collicion blocks in LOD
I think you will have to regenerate the chunks after changing that setting
try going to one of affected chunks, place a block or destroy one, waith a few minutes
and see if trees in that 1 chunks work fine

I feel like turning that to none is affecting my framerate

yea and it does it weather or not I have the setting set to none or non-colliding

and the bringing back the removed leaves collision is the only fix I know of
but you have the collision

after some testing- no it doesnt seem to

I installed a world gen mod that affects the overworld - but only negative world height -
Its called infinity caves and the problem started then. Unfortunetly I couldnt just get rid of the mod as it corrupted the world without it, so I had to put it back in. I dont have backups and my gf really wants this world to be saved and idk what to do : (
i figured since it only affects things under the bedrock layet, it wouldn't mess with anything but it seems to
but the only problem is this weird tree/render thing
That is also similar to one of the incidents that this happened
A guy installed a datapack or a mod for lower world, and new world worked fine but at the old one, cave holes appeared on the surfuce and trees did not had any leaves
You can try deleting all the DH data
IDK if it will fix it though

Wish there was a way I could just save my build somehow and import it into a remake of the world
and my gfs build
there are mods to do something similar
you can export it with world painter
make a litematica shema
or auto build it with create shema and canon
If new worlds really still work, there is probably a corrutpion in mc metadata / nbt of the save
you can try to fix it manually
using visual studio code with correct extension
or nbt viewer
IDK what needs to be changed though
you would have to compare all values
and make sure to not change any different values that are seeds or similar
