A good place to start might be getting Open Brush up and running in Unity and poking at the UI in general. It's all custom gameobject stuff. I can give you pointers and there's some notes in the dev docs: https://docs.openbrush.app/developer-notes
It probably requires being comfortable navigating sprawling Unity codebases and a penchant for code-spelunking and archeology!
which - perversely - I kinda enjoy...
The UI stuff is mostly simple once you've got your head round where things are. And you try and stick close to how existing stuff works.
