Style customization vs Registering css file
What's the difference between style customization and assets- Registering css file.......... What should I use I want to style some forms or infolists ?

Style customization is for modifying the default styling of filament itself, typically done with a custom theme. Assets tend to be for including styles or js for custom for components, etc. there is no right or wrong time to use either. And with a custom theme you’re less likely to even need a registered css asset.
As an example, the Tiptap editor plugin depends on a custom theme to be implemented for the styling of the field itself, but the content for the editor needs its own styling so that gets loaded as an asset separately.
