People love terralith datapack
all datapacks from stardust labs are usually good
Give Terratonic a try as well. It's a mixture of Tectonic (overhauls the general shape of the landscape) and Terralith which adds all the cool biomes.
So, it's better a DataPack than a plugin?

A plugin can probably achieve more but I've yet to really see one that I like for gameplay more than Terralith/Tectonic in recent versions.
Could also take a look at Terra https://www.spigotmc.org/resources/terra.85151/ which is a plugin for this but they haven't updated it to take account of the extended world height yet.

I've never had any experience with them
Terra and Terratonic/Terralith are the only world generators I've used in production on a Vanilla server

Looking at Iris though, from a gameplay perspective it would be annoying to cut down the taller trees
Most world generators will be a bit to a lot more intensive depending on what you use. If you're using something custom, pregenerate to a decent radius I'd say.
But yeah, a quick preliminary look into Stratos and Iris tells me that they look cool as hell but would probably tire me out on gameplay if I have to spend 10 minutes cutting down a tree. Also, they're paid so it's a bit of a trap with sunk cost fallacy if you do end up thinking it's meh.
