I cannot get a my second monitor to work
I can confirm that my desktop works fine with 2 monitors. One 4k, One 1080p. I've also connected my GPD Win4 to an external monitor.
One thing to note "gaming mode" (essentially Big Picture) is single screen only, so you need to change to "desktop" mode

well good luck to you, I've only been trying Bazzite on my desktop for a week, but (mostly) so far so good

(I managed to fix my issues by holding shift down during boot to disable the extensions) then I turned the offending one off

how do you get that up if you can't log in? I had some issues with gnome extensions, but for me I could log in, but then not do ANYTHING other than move the mouse?

Unable to Install Bazzite - Nvidia 3080, Intel i9 13900k
I'd love to offer more direct help, but I've got very similar hardware to you.
12900 with a 3080ti
I installed Bazzite onto its own M2 drive, keeping my Windows M2 "C" drive for itself...
I've also set up a BTRFS partition to share my games between windows and Bazzite.

Windows won't show up in GRUB
I ended up using rEFInd to help jump between windows and bazzite on on GPD Win4, works a treat. http://www.rodsbooks.com/refind/
I've since nuked windows but this was great until then
