Ticket: CORS Issue Blocking Signup on Local Installation
It could be, but I doubt it. I've only ever used docker for postiz. I even tried a fresh VM, Debain install and docker compose up and still got the error.

What I am saying, is that if you take the posted docker-compose.yml file you have listed on your website and try to 'docker compose up' - there are too many errors in the .yml file to start the containers. The fix or workaround you offer does not work as pasted in your tutorial.
I have also tried what you essentially recommend by using 'localhost' over postiz.homenet.lan and I still get the CORS issue.

dont know how, but there is supposed to be a space between :&" here: MAIN_URL:"https://postiz.your-server.com"# Line 8
and in so many other spots of the config you have posted. So if i use the github config, I run into the CORS issue as above or another issue about the postgres user not being found.

That did not help. Your example.yml on the page is full of errors and even after fixing them it was still unable to 'docker compose up'.
I then used the default example .yml from postiz documentation and ran into the same error as before.

Just tried a fresh install on a fresh VM, Cross-Origin Request Blocked: The Same Origin Policy disallows reading the remote resource at https://localhost:5000/api/auth/register. (Reason: CORS request did not succeed). Status code: (null).
