yes you can create a file in ~/bin/termux-file-editor to edit file with preferred editor

your problem is related to https://bbs.archlinux.org/viewtopic.php?id=299402 it's caused by your kernel not supporting landlock feature, you can disable it with --disable-sandbox or you can add DisableSandbox into pacman.conf

if you want to open a file using neovim, best guess is to navigate to the directory where the file reside and run nvim or just don't use it at all
