Mods from 1.21 will work on 1.21.1, and 1.21.1 clients can connect to 1.21 servers. There no is no reason to not be using 1.21.1 as a user.

there is a couple of mods in the pack that require 1.21
not 1.21.1
it doesnt work with 1.21.1
they will work on 1.21.1, change their required mc version if they specified only 1.21

the only change from 1.21 to 1.21.1 was a serious security fix
some mods dont work in 1.21.1 for somereason
and Iris 1.8.1 exists for 1.21.1
if they work on 1.21, they will work on 1.21.1

Mods that only works with 1.21 enforces strict requirement for Minecraft 1.21, which sucks because 1.21 have a serious security issue that everyone, especially servers, should move away and use 1.21.1 instead.
