What can I do to solve this?
I have tried uninstalling and reinstalling several times, manually deleting all the files that I have seen related to satisfactory, changing the game installation folder and nothing works for me

it looks like the StackMeMore mod is causing this problem, your log has it showing up when trying to install other things as well

We need more information to help you. Before launching the game again, open the Mod Manager and use the "Generate debug info" option, then send the zip file produced in #help-using-mods. This ensures that your help request won't get buried and forgotten in other, non-help channels!

I don't have any mod installed right now, I have the client I received installed from yesterday, and the smm, nothing more

it looks like the StackMeMore mod is causing this problem, your log has it showing up when trying to install other things as well
try making a new mod manager profile without stackmemore
