Minecraft GUI won't work...
I'm aware this isn't a DH issue but I was going to see if I could get some help non the less... I should be able to link a video here of the problem.

can you try with a limited amount, or no mods?

Maybe try in a new minecraft instance
I did
the problem was modded 1.20.1
I booted up regular 1.21
So just booting with a mod loader, even though you didn't have any mods installed, caused this?

I booted 1.20.1 and it didnt work
so i went to the actual minecraft launcher, and booted up vanilla 1.21
and it still didnt work
