their most popular is the sateen, no taper. Ripstop has a waffle texture to keep tears from spreading. It's really up to you, although I'd go no taper either way.
How about the slim version? I am actually thinking get the slim pair in olive sateen.
slim is a bit out of fashion, but its really up to you
if it was me, i'd be buying taper if I wanted something that was slimmer fitting
if you're on the skinny side I've seen skinny fits work well (see: discord solipsist z)
but generally you're gonna at least want pants that balance your top and bottom

Do I need to size up? It seems that Stan Ray has absolutely no vanity sizing according to their size chart.
Yeah probably. I ordered from Americanwear and they helped me with sizing (also cheaper than direct from Stan Ray). Ended up getting a 34, whereas my usual vanity size is more like 32
The top block is pretty slim, so whilst the waist is "true to size" (a 30 is 30 etc) I had to size up to get my hips and ass in.
They do stretch with wear throughout the day IME. At least in the waist
Which type would you say aligns more (or is) with workwear? All of the styles look pretty nice to be but it also seems like they'd serve different purposes depending on the activity
straight cut generally aligns most with workwear (see carhartt's cuts)
or like a really relaxed taper

(my straight cut pants are hemmed pretty high which wouldnt be associated with workwear)

you've just got a little more flexibility with wider cuts since many workwear pants are made without stretch
because both they are from an era before synthetics and because stretch in fabric makes it weaker
I like wearing boots a lot (not now bc It's summer lol) and I know boots are of course apart of workwear so I was like oh man those pants come up a bit high

Yeah I understand, in my case it's for both though, like for working and for style. So I'd want something that's like the usual type in workwear and outdoor activities

the last few are in slimmer cuts which he has phased out
I mean, tapered cuts are pretty standard. I think there are just better cuts out there most of the time
even a more relaxed taper tends to look better on most people

there have been fits that i LOVED that people didn't, meanwhile there have been fits that people went crazy for that i thought "....okay I guess"; you can't always predict how someone is thinking or feeling but the important thing is you liked the fit enough to wear it out and live your life
