And side question, am I wearing them okay and how could I wear them better?

Looks pretty good to me! If you want to take this up a notch, you can try layering a shirt underneath.

I think this combination is good. You could try some simple accessories to take it up a notch (maybe a thin chain necklace for example).
It's a bit warm out for that right now, but once it gets colder what types/colors of shirt do you think would work?

I'm not trying to make a statement with my shoes, I'd like to have shoes that are as functional as possible while not being completely unstylish or clashing with my outfits

Ohhh I see, I would suggest trying out accessories like caps to finish the look. As for the shirts, I personally believe that details come first before color, that means focusing on more casual details such as button down collars.
But yeah back to colors, your traditional white, light blue, and dark blue (like chambray) will work really nice with the mossy hue of the sweater.
I think white or a lighter color would make it more interesting. Contrast doesn’t always mean clash. A darker color wouldn’t be bad, just not as interesting. Try some on and see what you like!

A very common combo people do is white sneakers and dark pants, it's just adding contrast to your outfit
Take this for example, I have white shoes and shirt contrasting the black pants
