Updating to latest 1.21 DH server side fork causes a crash when starting server
the one linked on github is fine, but not the one that it auto-updates to

looks like it updated you out of the serverside fork into the nightlies
try deleting the config file at .minecraft/config/distanthorizons.toml (i think thats where its located for servers as well, not sure) and replacing the mod with the serverside fork again
