These linen pants from Zara have a pretty fancy back shape to them, I kinda like it
Is it just something they came up with for this model or this a style of pants I'm just not familiar with/something they copied from a fashion brand as they usually do?

It’s a fishtail back
It's a fishtail back and is a detail largely from older/vintage trousers. There often used to be buttons for suspenders at the points of the "tail".

kinda silly to have non-functional functional thing and then have belt loops, then right?
It still serves a purpose even like that, means you expose less back when you bend over and the notch allows more flexibility in what would otherwise be a fairly rigid piece of cloth around your waist.

I wear button up shirts 90% of the time anyways so it shouldnt look too out of place
