Can I use a c2c to cover previous work experience, even if it wasn't created then?
If I created a c2c now, would I be able to use it to fill in a work gap from 3 years ago?

Can you? Sure.
Can they also dig deeper and find when the business was created? Yes.
Can that potentially cause you issues with not being able secure a contract? Yes.
Like you'll hear so much about here, it's all about risk.
In my opinion, if you're using your LLC to try to cover some past experience or generate fake experience, as long as you're able to talk to the expeirence that you've listed ... I doubt that companies are going about and doing that good of efforts to discover that info.
