Also been having problems uploading PlatformIO build into the device and now it fails every time 😦

If the serial monitor works fine (and the port is the same!), I wonder does the device enter the boot mode properly? I've seen/heard that happen on a couple of SH-ESP32 devices. Try pressing the BOOT button to force the bootloader to the correct mode when starting to flash the device.
Tried all the easy things - removed all GPIO stuff etc, a few different usb-cables, pressed the boot and/or reset buttons, etc ...
No luck. I guess it could be possible that I've managed to break something physical there
That's of course possible but a bit surprising if the serial monitor still works.
Does your currently installed software have OTA enabled?
Using JTAG for programming would be another workaround.
OTA is not enabled (damn!) and I'm unfamiliar with JTAG
JTAG is nice. The downside is that you need an ESP-Prog board. With that, however, you can do live debugging: set breakpoints, watch variables, the whole shebang.
