Anyone know what causes these weird graphic spikes?

Should move to Bliss' thread, but have you changed any settings and are you using any other mods? And are you on the latest build?
Good sir/ma'am/person, you are memory starving. Moving around will kill your frame rate as things have to move in and out of the allocated memory at a very high rate. You may want to reduce your lod distance if you're planning to move around.

Yea your memory usage is insane. Every time Minecraft uses up all the memory you gave it it needs to clear it out which causes those lag spikes
Try downloading some memory optimization mods and use the Java arguments to improve the garbage collector

That's not what they meant.
What you want to do is set your lod distance lower. The rate of data being moved in and out of your memory is 8GB/s. That's stupid high even for a game like Minecraft.
