Can't set Z offset
Hi! I can't get the z offset "stable". I have to babystep ance correct at any print. Or way too low or way too High! Any advice? Euclid probe on a 300x300

did you check that the two screws which hold the euclid are tightened? if your Z speed is too high they can get loose over time.
did you use the original parts, especially for the "klicky"? I had some notable differences after I had to replace the original one and used a cheap part I had in the drawer

Are the extruder parts made with PETG? Depending on the temperature, the hotend could shift slightly.
Do you load you bed mesh at the start of a print ?
