Can't change size as top of scroll bar missing
Trying to resize these video feeds so I can fit more on but it won't show the rest of the options as can't scroll up. Also no option to type in a manual number..?

No, you cannot specify the width manually.
However, a solution to your problem would be to increase the amount of Gridstack columns.
You can do this by the following:
Settings > Gridstack > Column Count

so is the description in grid stack wrong
it says small no when really it means how many of the 'largest widgets' should I show? largest being the video feed.
this checks out as have just counted the other small ones as 10 and thats what its set too in grid stack

Gridstack is relative to your screen size. Small is for small screens like phone, your computer screen has a higher chance in being in the medium to large category
how do you control the number of large widgets?
It sets the amount of columns in the grid, and certain widgets take more than one column on their minimal size

all I can do in homestack is control the number of 'small links'
I'd like to tell it a video pane should take up 2x rows each instead of 3x rows. It has 10 rows per collumn.

Oh you want to make the widget smaller.
The minimum wize of that widget is 3 columns for 2 rows. You can't make it smaller this way.
What you can do is augment the gridstack to 20 and make the other things bigger
@Tag can we maybe lower the minimum size? 3 is pretty big...

Sure, but like I said, this minimum size is to maintain the ratio of the video playing. Augmenting the gridstack is a good solution for now until there's any updates

3 of width for each means you’ll need 12 columns if you need to have 4 feeds per row 😉 increase the gridstack columns in the layout settings and that should do the trick.
I agree with @Tag setting the smallest size at 3x2 makes sense in order to keep the aspect ratio
