I'm using just only Sodium, Iris and Vanilla Resource pack. + Shader pack for Iris

I replaced them into base blocks, such as grass_block, cobblestone, etc. It will not get any bug if I use optifine or Vanilla launcher version It will happen just only when I use Sodium and Iris Very weird 1.19.2 version

so you are replacing vanilla's resources by hand instead of using a resourcepack, do I understand this correctly?

I don't know how to explain. It's just a normal method of making resource pack. For example, I replaced my custom block.json to stone_block.json, etc. So, the problem will not come from my resource pack for sure. For example. I mada new custom block (model with new shape) and rename them to grass_block.json and replace it to the original block.

I'm not sure about this, but sodium might make a few usually reasonable assumptions about block models which might cause yours to break. Maybe there's something useful in the log.

How to get a log file:
Game logs can be found in the logs sub-directory in .minecraft on clients, or the logs sub-folder of the server directory for servers. We're probably interested in the file named latest.log, which you can drag and drop into Discord.

Do the models stretch outside the bounds of a default block area? And is it like multiple models or just 1 huge one (idk if u can even do that)?

There are some modeling techniques in Blockbench that make it wider or taller than 3x3 (Vanilla Java). I just found out yesterday that it's a bug of Sodium mod.
