Securing MailChannels

Is there any way to reserve an email/domain on the MailChannels integration so only I can use it?

That would be done with your SPF record. If it doesn't have mailchannels then emails will be rejected

MailChannels does some inbound filter which I am guessing is what they do for spam protection

I'd recommend you setup SPF, DMARC and DKIM, configure your domain with DKIM and send that DKIM key when using the mailchannels API if the DMARC is enforcing the use of DKIM then youre good
Hello, I’m Allie!
That’s the same for any email service(that doesn’t run verification of its own). If I run an email server of my own, I could send emails as your domain. But if you configure SPF, DKIM, and DMARC correctly, then it should never arrive
