Embarrassingly stupid question: how do I know what data tools like Cursor are actually collecting?
Title. If I have given it access to my Documents folder for example, how do I know it's not storing/using that data for more than just improving its output?

You could use tools like Sysinternals Process Monitor and Wireshark to see what it's actually accessing and uploading but past that all you've got is their privacy policy and a dream, you have no real control over what they do with a file once it's on their systems.
