Bazzite Version
is there a significant change in the bazzite version specifically for the asus rog ally z1 than in the regular bazzite version?
Or a significant change to Nobara in general?
Also are there any special drivers, mods, programmes etc. installed?

Yes, the Steam game mode. But I find it more than annoying, especially because you have to import many games from other launchers.
Stupid example, Minecraft, SIMS or Assassin's Creed

bazzite-deck (the version used on the ROG Ally by default) contains Steam Gaming Mode, which has the same boot experience as SteamOS.

That means I can install everything as with the Asus rog ally version provided?
I have tried to deactivate or delete the steam game mode, but unfortunately this does not work

I think there’s a fundamental misunderstanding somewhere. The question of importing external launchers seems completely separate from game mode, but it appears that you have conflated them
As indicated above, you need to rebase to the desktop version Bazzite if you do not want game mode
The
-deck
build is similar to how SteamOS runs on a Deck. Game mode is first and desktop mode is secondary. If you truly prefer a desktop-only configuration, use a desktop image
I’m not even sure if you’d even have access to a virtual keyboard at the login screen because the keyboard is tied to Steam which isn’t loaded before logging inI mean, they did mention wanting a login screen
Sure, but it doesn’t sound like they knew Steam supports multiple users and provides passcode support
