What shirt colors work with dark wash jeans?
I tend to only wear dark wash jeans and black jeans, and wear this with various color t-shirts (White, black, olive, brown), and pair it all with a navy coat.
I want to invest in couple of shirts to wear untucked but unsure what are the best colors, I'm thinking of buying 4-5 pieces

Pretty much anything will work with dark denim
I think a blue stripped shirt and a chambray shirt alot of people will consider staples. @Legs answer is spot on. Most things will work with dark denim and navy coat. I think a better way to approach this is either identify what colors you like most (either from methods such as color theory or simply looking at your closet and and see what colors you're drawn to etc) and then purchase based on that. You could also go one step further and get different material and textures for different seasons, suede, silk, linen. All can add some interest to your fits while technically being the same shirt&jeans outfit.

On top of shirts, I need a casual jacket when it's too warm for my navy coat. I usually wear a navy harrington, but it's too similar shade of my jeans and makes it look weird. Would you suggest a black jacket? Perhaps a leather jacket?
I would go with light, desaturated button ups, like white, light blue, light pink, etc.
I feel like the classic harrington color is beige so you could just get one like that
Think you cant go wrong with a leather jacket!
