Syncthing is unusable through any available option.
Essentially the issue that I'm having is that I am unable to use Syncthing in any meaningful capacity from any sources that I found to be available from.
Problem symptoms:
UI freezes for hours or simply never responds OR webserver crashes and does not take changes. Any attempt at changing any setting within syncthing will cause it to freeze. Problem exists within both the WebUI and 3rd party "tray launchers".
Things I have tried:
I have tried using syncthing through homebrew, and Flatpaks (syncthingy, Syncthing Tray, and Syncthing GTK). I have tried initiating connections from my PC as well as only accepting incoming from my server. Both result in a hang and require a reset of the program.
System Info:
This is a very strange set of bugs that I have never experienced on the dozen+ systems that I have used Syncthing on. Everything from Windows to android to linux (ubuntu debian arch and centOS). Only on Bazzite do I have an issue.

To anyone coming after me here is the solution: I found that the issue was tailscale. I just ran
tailscale down
and did all my configuration just fine in syncthing. I also changed the listen address to 0.0.0.0 (make SURE to set a good password. I wouldnt do this on a laptop, I did this because im on a PC that is always behind my firewall). Afterwords just run tailscale up
