It seems simple enough to copy, but I honestly don't know what pants or shoes I should pair those with.

I honestly can't find much of those. He only posts videos of his upper half (he posts cooking vids on YT).
I mean it's hard to give direction here because you can wear literally anything on the bottom with what he's wearing on top

Looks like minimalist city boy adjacent. Go to Uniqlo and size up 2x on tops and buy the widest pants you can find in your waist size
