Surge in legitimate traffic causes site down same time daily
Our website routinely jumps from around 200 visitors to 11000 and crashes daily around 11 AM PST. It usually takes aboug 18 minutes to get right. It doesn't crash everywhere. Only some locations but not others, often those locations are the same, but not always. I'm using Plesk.
We have a business-level account. We are using Plesk on Ionos as our home server. We disabled proxy on A records for testing to no avail. Then "paused" Cloudflare, and that also didn't solve the issue. I'm at a loss where to go next.
I am a self-taught web developer and I don't know what I don't know.
Help! -- I've been struggling to figure this out for 3 months
Also, please let me know if this isn't the right forum. Thank you!

I'm not sure what you mean by overloaded - the server isn't even using 25% of the resources (its a dedicated cloud server)
paused cloudflare and that also didn't solve the issueso it's not a cloudflare issue... if the site goes down this means that in one way or another a server isn't responding (in time) time to find out which server that is :)
Ok, thanks for that tip. I guess the issue must be with the Plesk server then?
