gunzip < "/mnt/hdd/immich/dump.sql.gz" \ | sed "s/SELECT pg_catalog.set_config('search_path', '', false);/SELECT pg_catalog.set_config('search_path', 'public, pg_catalog', true);/g" \ | docker exec -i immich_postgres psql --dbname=postgres --username=<DB_USERNAME> \ is this correct?

No, there is a \ too many at the very end You can put it all on one line to prevent any confusion like so: gunzip < "/mnt/hdd/immich/dump.sql.gz" | sed "s/SELECT pg_catalog.set_config('search_path', '', false);/SELECT pg_catalog.set_config('search_path', 'public, pg_catalog', true);/g" | docker exec -i immich_postgres psql --dbname=immich --username=postgres (Assuming your DB user is postgres)
