would have to show the values to determine much. The CAA's are probably unnecessary/duplicate, some CNAMEs/MX/A/AAAAs could be very critical
If you don't have an existing website/want to use some other hosting, then different story
i have my website, im just starting to host it, and randomly it comes with a lot of random records, could i just delete all of that and make my A, AAAA, A pointing to my vps?

Those are cert authorities. Yea those can go. In a perfect world you'd create one for the specific cert authorities you're using (Let's Encrypt, for example) but it's not necessary
if you're not using their mail, you can delete the mx

Error 520 is essentially a catch-all response when something unexpected happens or when the origin server incorrectly interprets or does not tolerate a request due to a protocol violation or an empty response.
