Display freezing on both GNOME and KDE versions, using multiple monitors.
All the info I can think of:
I'm using a pair of 22" Acer monitors, 75 Hz/1920x1080/100% scaling, plugged into the GPU outputs. On occasion, a monitor's display will "freeze" and stop refreshing--as far as I can tell, things are still active underneath it, but the graphic is frozen on the last frame. Changing the monitor's refresh rate in Settings will fix it, but it has a noticeably long delay.
The freeze seems unrelated to GPU or CPU load, since it can happen at all times, and it's occured on both KDE and GNOME variants of Bazzite, so I don't think it's due to a problem with one DE. I have noticed, when using regular Fedora, that it only seems to occur with Wayland-based sessions, since Budgie, Cinnamon, and Xfce don't have this issue.
If I need to supply more info, feel free to ask and provide a command to fetch it if needed, and I'll do my best to help.

How are the Monitors connected?
and is it the same monitor that freezes or do they both do this?
HDMI. I believe it's the same monitor each time, display 1, but I recently changed their plug locations on the card because they kept being set in the incorrect left-right order.
If it happens again, I'll give an update.
Solution
I would start by replacing the HDMI cable on the one that is having issues
I might also switch to KDE Bazzite but that's unrelated (weird input lag in games).
I'll see if I can grab a spare. If it's that simple I'm going to be so mad.
I think I might have a spare cable in my closet, but I'm not sure. I'll try that first, though, thank you.
If it is a cable issue, I would be fascinated to know why it doesn't happen on X11. Computers are weird.
HDMI handshaking is basically black magic
I wish I could use an alternate method, tbh, but not in my current situation. I've got a spare cable, I'll try that first.
If it happens again I'll also post the logs.
Unfortunately it's one of those really fun issues that occurs without any set trigger.
Feels like Nvidia issue
I noticed freezes some months ago in previous drivers, and it was during the rare moments I had my TV plugged on HDMI + my DP monitor as usual
It was fine when using Intel iGPU
Just as an update, I haven't seen the issue yet, but I will report if it happens again and will see if I can check journald.
I have seen so many monitor issues solved by replacing the HDMI cable that it's the first thing I try.
If it was just that, I'm going to feel so stupid.
